Spirulina Breakfast Pancakes

This morning I wanted to try something new and I was feeling experimental. I had a packet of spirulina powder in my cupboard that I haven’t used in a while, other than in a smoothie, so I decided to make some superfood pancakes to start the day!

Here’s the recipe (makes 3 pancakes):

2 egg whites
2.5 tbsp soy yoghurt
1 tsp spirulina
1.5 tbsp oat bran
2 tbsp flaxseed
1 tbsp agave nectar to sweeten

Directions:

Mix together all ingredients until combined.

Cook in a saucepan (grease with coconut oil) on a high heat until firm. Flip halfway through cooking.

Top pancakes with extra yoghurt, berries and desiccated coconut for extra flavour.

Spirulina is packed full of protein, so is a great protein source for vegans and vegetarians alike. Spirulina is certainly a superfood everyone should have in their cupboards. It is a natural algae which is high in iron, vitamin B-12 and is great for boosting the immune system.
