Blueberry ‘Porridge’

I’ve created another breakfast recipe using wonderful quinoa flakes as a substitute to the grains of regular oatmeal. Quinoa porridge is the perfect way to start the day with a mixture of protein, healthy fats and carbs.

Here’s the recipe:

3 tbsp quinoa flakes
300ml unsweetened almond milk
1 tbsp soy yoghurt
Cup of blueberries
Toppings: strawberry, banana, chia seeds, blueberries and cacao nibs.

Directions:
Cook quinoa flakes in almond milk over a low heat and wait until it starts to bubble. Add blueberries and simmer until the porridge thickens the add the yoghurt.

Serve in a large bowl and top with your favourite toppings! Enjoy.
