Ever felt the need to indulge without wanting to feel bloated or guilty for the rest of the day? Well fear not! I have created these delicious vegan brownies which are free from all nasties. They are totally healthy and they are wheat-free, sugar-free and dairy-free! But be careful… You may not be able to keep your hands off them!
Here’s the recipe:
100g buckwheat flour
60g raw cacao powder
2 tbsp coconut oil
1 tbsp maca
1 medium banana
1 drop vanilla essence
1 tbsp cashew butter
1 tsp baking powder
100ml almond milk
1 tbsp agave nectar (or other sweetening substitute)
– feel free to add any additions, such as nuts, goji berries or chia seeds
Melt the cacao powder together with the coconut oil in a Bain-Marie.
Add to all dry ingredients in a large bowl.
Add wet ingredients and combine until a batter is formed.
Bake in an 8x8inch tray in a pre-heated oven (180 degrees C fan) for 20minutes or until cooked through.
Leave to rest until cool, slice then serve.
