Cinnamon Choco Chia Pudding with Cherry Compote

I was experimenting with chia seeds this morning and I wanted to make myself a delicious, refined sugar free, vegan dessert that I could tuck into at breakfast, lunch or dinner.. Or even as a snack!

So here’s what I created – a chia pudding deluxe delight!

Here’s the recipe:

For the chia pudding –
2.5tbsp chia seeds
1 cup unsweetened almond milk
1 tsp cinnamon
1 tsp baobab powder
1 tbsp raw cacao
1 tbsp maple syrup

For the cherry compote –
4 tbsp dark cherries
2 tbsp agave nectar
200ml water

Directions:
To make the chia pudding –

Add the chia seeds, almond milk, cinnamon and baobab together in a bowl and stir until mixed. Leave to set in the fridge overnight.

In the morning (or the whenever you’re ready to make it) blend the chia seed mix with the cacao and maple syrup in a blender until well-combined.

Place into a jar.

To make the cherry compote-

Add the cherries and water to a pan and simmer until the water begins to evaporate. Add the agave nectar and leave to thicken as if it were a jam.

After the majority of the water has disappeared you should be left with a cherry sauce. Place this into a blender and blend slightly, leaving a few cherries whole for added texture.

The grande finale –

Place some soy yoghurt and chopped fruits/berries/nuts on top of the chia seed mixture in the jar. Top the yoghurt and fruit layer with the berry compote and stir slightly to make a delicious pudding!
