Here’s another delicious variation on my quinoa porridge for you all to enjoy! Raspberry quinoa porridge is my personal favourite – the natural sweetness of the raspberries is perfect for complementing the nutty taste of quinoa without the need for added sugars or artificial sweeteners.
Here’s the recipe:
3 tbsp quinoa flakes
250ml almond milk
1 cup raspberries
1 tsp cinnamon
3 tbsp soy yoghurt
Mix quinoa flakes with almond milk, yoghurt and cinnamon and leave in the fridge over night to thicken.
In the morning, pop the mixture in a pan until it starts to simmer. Add the raspberries and stir until they have combined with the mix. Add additional almond milk if the mixture starts to become too thick.
Top with nuts, fruits, seeds and grains of your choose! My personal favourite toppings are raw buckwheat, berries, maple syrup and flaked almonds. I also love to add cacao nibs for added chocolate-ness.. Yummy!
