I decided to take some time off from revision and bake! So I wanted to create something new and delicious. I experimented with ingredients and came up with these delicious cookies which are so scrumptious I can’t even put into words!! My best creation yet I would say! They are hard on the outside and gooey in the centre, they are sweet, they are chewy and they are packed full of goodness! Enjoy.
Ingredients (yield 10-12 cookies)
1 cup rolled oats
1 cup buckwheat flour
100g ground almonds
1/2 cup coconut sugar
1/2 cup coconut oil
120g agave nectar (or honey)
2 tbsp maple syrup
1 tsp cinnamon
1 tsp maca
2 tsp acai powder
1 tbsp raw cacao nibs
Here’s how to make them:
Mix together all of the dry ingredients. Combine these with the melted coconut oil, honey and maple syrup. Stir in the cacao nibs last and combine until mixture is sticky.
Form into small balls and flatten slightly. Bake on a tray with great proof paper so the cookies don’t stick.
Bake in a preheated oven at 170C fan for 14minutes.
Leave to cool for half an hour, then eat! 🙂
