I fell in love with my last Chia Pudding that I just had to make another one! One of the best things about eating vegan is that you can enjoy dessert at any time of the day – who could not want that?! This pudding can be eaten for breakfast, lunch, as a snack or as a dessert, yummy!!
Here’s what you’ll need:
3 tbsp. chia seeds
150ml almond milk
4tbsp mixed fruit
1 tsp acai powder
3tbsp agave nectar
soy yoghurt (as much as desired)
Add the chia seeds to the almond milk and leave to set overnight in the fridge
The next day, blend the chia pudding with the blueberries and acai powder until relatively smooth
Make the compote by simmering the mixed fruit with 100ml water and agave nectar until it has thickened, this will take a few minutes – when thickened, blend.
Alternatively layer the yoghurt, compote and chia pudding – you can add some extra whole fresh berries and nuts to your preference! Enjoy.
