Deliciously Chocolatey Vegan Brownies

A few weeks ago I made a delicious brownie recipe, totally vegan and totally healthy. I felt like it could have been improved to make it a little less dry so I made some more.. Everyone loves an excuse to bake more brownies after all! So here is my revised brownie recipe, and it really does taste better than ever! And it’s totally guilt free. Yum!

Here’s what you’ll need:

100g buckwheat flour
1.5tsp baking powder
1tsp organic burst maca (optional)
1tbsp nut butter (cashew or peanut)
1 medium ripe banana
60g cacao powder
3tbsp coconut oil
50g vegan butter
3tbsp agave syrup (or maple syrup)
1tsp vanilla extract
150ml coconut milk (or almond milk)
A sprinkle of raw cacao nibs

Directions:

Preheat the oven to 180’C fan

Melt coconut oil with the cacao powder and the butter over a Bain Marie until smooth and silky

Mash the banana and add it to all the dry ingredients in the bowl, stir well

Add wet ingredients to dry ingredients and combine thoroughly

Pop mixture into a 8×8 inches oven tin and bake for 20minutes or until cooked through

Leave to cool, slice and enjoy! 🙂
