This delicious mango salad is the perfect summer dish to make a filling lunch or even a light dinner. It is packed full of colour, nutrition and tasty ingredients that you’ll struggle not to want more after finishing your dish, it’s so delicious!
Here’s what you’ll need to make this:
1/2 a ripe mango (chopped into chunks)
1 medjool date (chopped into small pieces)
One handful of watercress, rocket and baby spinach
1tbsp pumpkin seeds
1tbsp unsweetened cranberries
1/2 a yellow pepper (chopped)
1 medium carrot (grated)
1 small fresh beetroot
2tbsp cooked quinoa
Squeeze of lemon
Add all ingredients to a large bowl and mix together well. Sprinkle with lemon. To make it even more exciting you can drizzle the salad with extra virgin olive oil, agave nectar and mustard. Or, instead you can top it with hummus, guacamole or even minted yoghurt, yummy!
