I was really craving something sweet and cake ‘like’ for an afternoon treat today when I thought up these vegan chocolate cupcakes, delicious!
Have you ever tried using savoury whole foods in your baking? Well here is a surprise for you all! The main body of these cupcakes is actually green lentils! They are the perfect substitute for heavy flour and butter usually used in baking and of course they make these cupcakes highly nutritious!
Here’s what you’ll need to make them:
(Yield 10-12 cupcakes)
300g cooked green lentils
100g flaxseed milled
1tsp baking powder
1tbsp coconut oil, then melt
2tbsp cacao powder
2tbsp almond milk
2tbsp maple syrup
Stevia (or sweetener) to taste – I used 2tbsp
2tsp vanilla essence
Strawberry slices to decorate.
Preheat the oven to 170’C (fan)
Blend oats, lentils and flaxseed until thick and smooth. Blend with all other ingredients.
Place mixture into small cake tins- this mix makes 10-12 cupcakes. Pop a strawberry slice on top of each cake.
Cook for 20minutes, or until cooked through. Leave to cool. Enjoy! 🙂
