Vegan Choco Coconut Fudge Ice Cream

So I was actually trying out a homemade fudge recipe, but after freezing the ‘fudge’ I realised that they actually tasted and felt better as Ice Cream squares instead, yummy! So I bring to you these delicious squares (even though they are more like rectangles).

Here’s what you’ll need to make 3 squares:

1 ripe banana
1 tbsp olive oil
2 tbsp coconut oil
2 tbsp desiccated coconut
1 tbsp raw cacao powder
2 tbsp maple syrup
1 tsp vanilla extract

Directions:

Line 3 small square/rectangle tins with grease proof paper.

Blend together all ingredients.

Spoon into tins to about 1cm height and top with coconut sprinkles.

Set in the freezer for at least 2 hours. Take them out, and enjoy your ice cream! 🙂
