Vegan Coconut Cookies

I absolutely LOVE coconut and I love using it in my recipes as it adds a delicious nutty sweet taste. Coconut is highly nutritious and rich in fibre, vitamins and minerals. These cookies also contain maca which is a superfood. I use Organic Burst maca as it lasts for a long time and is packed full of nutrition! Maca was used in Ancient Peru for endurance, energy and hormone balance. It is recommended we use 1tsp of maca a day in our cooking/baking to reap all of the benefits, including heightened energy, strength and sexual health.

Here’s what you’ll need:

1 cup rolled oats
1 cup desiccated coconut
100g ground almonds
1/2 cup coconut oil (melted)
1 tsp cinnamon
1 tsp maca (I use organic burst)
3 tbsp maple syrup
2 tbsp agave nectar (or syrup)
A few cacao nibs for sprinkling

Directions:

Preheat oven to 170’C fan
Combine all ingredients and mix well
Form small cookie shaped balls
Place on greaseproof paper lined baking tray
Bake for 11mins, leave to cool for 15mins at least where they will harden
