Do you enjoy treating yourself to fruity and nutty ‘healthy’ bars? Well these bites are the perfect homemade replacement for you! These bites are pretty easy to make and they do not require much equipment or any specialised cooking know-how, perfect! They are also jam packed full with superfoods and quality nutrients to help your body become stronger, healthier and better at fighting disease. I hope you enjoy these as much as I did!
Here’s what you’ll need:
150g pitted dates
100g ground almonds
3 tbsp. rolled oats
2 tbsp. chopped hazelnuts
1 tsp ground cinnamon
1 tsp maca powder (I use organic burst)
3 tbsp. unsweetened dried cranberries (can also use fresh cranberries, although I haven’t tried that yet)
1 tbsp. pure maple syrup
a sprinkle of desiccated coconut (sweetened or unsweetened depending on taste)
Simmer the dates in a little water in a saucepan until they become softer, although not totally soft. Drain the water and blend the dates in a food processor or blender to make a date paste.
Blend all ingredients (apart from coconut) together in a large bowl (you can also combine it by hand using a plastic spoon – this is what I did!)
Place mix in a 6×6 inch lined baking tin and even out the mixture before sprinkling on the coconut. Pop in the freezer to set for at least 2 hours.
Take out of the freezer, slice into bite-sized pieces and keep refrigerated. Enjoy!
