I was experimenting with a few different flavour combinations in the kitchen yesterday. As you all know I love to enjoy tasty and indulgent foods, but in a healthier way. I love treating myself to a snack bar which makes me feel as if I’ve had something naughty, yet in reality I’ve just filled my body with a nutritional super boost of wholefoods, superfoods and tasty treats.
I had no snack bars left so I wanted to create something to keep my sweet cravings at bay whilst nourishing my body, so I created these delicious Lemon Tropical Bars. They taste just incredible!!
Here’s what you’ll need:
200g pitted dates
100g rolled oats
50g dedicated coconut + 2tbsp to stir into the mix
1/2 cup melted coconut oil
2 tbsp maple syrup
1 tsp Sicilian lemon extract
60g ground almonds
2 tbsp cranberries
Here’s how to make them:
1. Blend together the pecans, dates, oats, mango and 50g coconut in a food processor until combined. Slowly add the coconut oil, maple syrup and lemon extract and blend.
2. Empty out mixture in a bowl and stir in with a large spoon the 60g ground almonds, 2 tbsp coconut, 2 tbsp cranberries and combine.
3. Empty mix out into a lined 6x6inch baking tin and flatten so the surface is even. Sprinkle on some dedicated coconut to make the bars look nice.
4. Freeze the bars for at least one hour. Take out of the freezer, slice into 8 bars and enjoy the taste explosion! 🙂
