I am back from my holiday and it is safe to say that I am need of a healthy kick start! I find it difficult to stick to a healthy eating plan whilst I’m on holiday. Holidays are also a time to relax and de stress your body, so indulging a little here and there is in fact fantastic for you!
To snack on, I’ve created these delicious Choco Goji Fig Balls. I had some dried figs in the cupboard so decided to use these instead of dates as the base to my snack. Figs are so versatile and they make a great binding agent in vegan cooking. I added the goji berries for a superfood kick, as well as the raw cacao powder for an antioxidant boost.
Here’s what you’ll need (yields 6)
175g dried figs
2tbsp ground flaxseed
1/2 tbsp raw cacao powder
1.5-2 tbsp pure maple syrup
1 tbsp desiccated coconut
3 tbsp goji berries
1. Combine the dried figs, pecans, flaxseed and raw cacao in a food processor until combined.
2. Drizzle into the food processor the maple syrup.
3. Stir in the coconut and goji berries.
4. Form into balls and place on a lined baking tray and refrigerate to set.
