Mango & Coconut Squares with a Tropical Dipping Sauce

I absolutely love the summer and I love the taste of fresh summer fruits. When I am on holiday I love the taste of coconut and I have always been a huge fan of mango. So I combined the two. I added some maca root powder for an added energy burst, perfect for snacking on the go or enjoying as a yummy dessert!

These bars are raw, vegan and they are totally refined sugar free. They’re so healthy that you can even eat them for breakfast… Yes please!

Here’s what you’ll need (yield 16 small squares):

For the squares:
– 160g pitted dates
– 240g chopped mango
– 3tbsp ground almonds
– 2tbsp milled flaxseed
– 4tbsp oats
– 3tbsp desiccated coconut
– 1/2 cup coconut oil, melted
– 1tsp maca powder

For the dipping sauce:
– 240g chopped mango
– 2tbsp maple syrup
– 3tbsp desiccated coconut

Directions:

1. Add all square ingredients (apart from melted coconut oil) to a food processor and blend.

2. Slowly add the coconut oil to the mix, until combined.

3. Spoon mix into a lined greased baking tin, 6x6inch square, and make sure the mix is evenly spread. Sprinkle with some extra coconut.

4. Freeze the bars for at least one hour and a half. Slice then serve.

Next, make the sauce-

5. Add all sauce ingredients to a blender and blend until smooth. Spoon into a small bowl.

6. Dip the squares into the dipping sauce and enjoy! Keep refrigerated.

    This looks delicious! I’ve made similar bites, but without mango. Might get one tomorrow and give it a try. They must so taste like summer with the mango and coconut 🙂
