Pancake stack.

I feel as if no weekend is complete without having pancakes for breakfast, right?! I absolutely love them! They’re so versatile and they can be topped with anything you like too. Yummy! This recipe is super easy to create and follow, it works every time! I hope you love it.


You’ll need (yields 6 fluffy pancakes):

1/2 cup wholegrain spelt flour
1/2 cup wholegrain buckwheat flour
2tbsp oats
3 medium eggs
1tsp baking powder
1tsp vanilla essence
1tsp cinnamon powder
Splash of almond milk (as much as needed)
Greek yoghurt, maple syrup & berries to top the pancakes

1. Mix eggs, flour, oats, cinnamon, vanilla and milk to a food processor and combine until it forms a batter.

2. Fry the pancakes in a saucepan greased with coconut oil for a few minutes until the batter starts to bubble.

3. Flip the pancake and cook on the other side until cooked through and fluffy. Repeat a further five times to make all six pancakes.

4. Serve pancakes in a stack with yoghurt, berries and syrup! Delicious!
