Banana Fig & Date Slice

I love using figs and dates in my recipes. They make a great base to any vegan snack as they’re sticky, sweet and are great at combining ingredients together. These slices can be enjoyed warm or cold. They’re a delicious, filling and healthy snack. They’re totally healthy, vegan and refined sugar free, yum! Enjoy!

You’ll need:

200g dried figs
60g pitted dates
250g wholegrain spelt flour
1 banana (plus a few slices to decorate)
120g coconut sugar
1 tsp cinnamon powder
100ml almond milk
100g flaked almonds
1 tsp baking powder

Directions:

1. Preheat the oven to 170’C (fan)
2. Grease and line a 6x6inch baking tin
3. In a food processor, combine the figs, dates, banana and coconut sugar until smooth
4. Add in the flour, baking powder, cinnamon and mix again
5. Slowly pour in the almond milk until the mixture represents a cake batter
6. Gently stir in the flaked almonds
7. Spoon the mixture into the baking tin and bake in the oven for 35-40mins or until the cake is cooked through
8. Remove cake from the oven, cool the cake, slice into 9 squares and enjoy!
