Baked Blueberry Chia Oats

I absolutely love a bowl of porridge/oatmeal for breakfast. There’s not a more filling way to start the day! Adding flavours to porridge makes it so much more delicious and enjoyable. Try experimenting! Blueberry and Chia are a great combination as they are packed full of antioxidants and Omega-3 fatty acids to power your body through the day.

You will need:

2tbsp rolled oats
1tbsp chia seeds
200ml almond milk
1tsp ground cinnamon
Handful of blueberries

Directions:
1. In a saucepan, combine all of the ingredients and stir constantly until the mixture has thickened. This should only take a few minutes.

2. Spoon the mixture into an oven proof dish or bowl and bake in the oven at 180’c (fan) for 8-10minutes.

3. Remove the porridge from the oven. Leave the porridge to cool for a few minutes before eating.

4. For added deliciousness, top the porridge with some coconut yoghurt or fresh blueberries and maple syrup!

    I love finding different ways to spice up my breakfast porridge! Hadn’t thought of baking it though, that’s definitely one to try soon. Great post 🙂
