Raw Bucknola

Here is my NEW Raw Bucknola recipe! This Bucknola is totally vegan, refined sugar free and gluten free.. Yummy!

This recipe is so simple and easy to make. It almost seems difficult to imagine how it tastes so darn yummy!! Be warned… You’ll have to stop yourself from spooning this one out of the jar every time you open the fridge!

You will need: (makes one batch)

140g soaked dates (dried dates will be fine)
100g buckwheat groats
100g chopped coconut/coconut flakes
1 tsp cinnamon powder
20g goji berries
20g pumpkin seeds

Directions:

1. Combine the soaked dates, buckwheat, coconut and cinnamon in a food processor/blender until combined well and the mixture is shredded.

2. Scoop the mixture into a bowl and stir in the goji berries and pumpkin seeds until evenly spread through the Bucknola.

3. Store in an airtight container and keep in the fridge!
