I have juggling so many things recently and I’ve been a super busy bee so I needed a quick way to get my sweet fix! This Mugcake is so easy and so quick to make that it shouldn’t taste good at all… But it tastes YUMMY! This Mugcake is no ordinary Mugcake. It is refined sugar free, it is healthy and it is HUGE. I topped my Mugcake with a tsp almond butter, some cacao sauce and a few cacao seeds. Yummy.
To make one giant mugcake you’ll need:
1tbsp coconut flour
1tbsp buckwheat flour
1tsp baking powder
1tsp raw cacao powder
1tsp vanilla essence
2tbsp melted coconut oil
1 egg (or 1 medium banana/a flax/chia egg if vegan)
2tbsp nut or oat milk
1tsp Manuka honey (or agave/maple syrup if vegan)
1. Mix with a fork all ingredients in a large mug.
2. Keep mixing until a batter forms.
3. Place in microwave for 2 minutes, until cooked.
4. Top with your favourite toppings and eat right away!
