Clean Breakfast Pancakes

It’s here! It’s the weekend, wahoo! I’m not sure about you, but it has become a tradition of mine to have something that’s seemingly naughty for breakfast at the weekend as it feels just a little but more indulgent and special than weekday breakfasts! My absolute favourite thing to have is pancakes. Pancakes are everyone’s favourite! If you’re looking for a quick and easy pancake recipe this weekend, I’m sure this one will definitely hit the spot.. Enjoy. I’ve also included a vegan alternative to this recipe so it is suitable for everyone! 🙂

To make 3 pancakes (one serving), you will need:

1 egg (vegan: one flax egg or one mashed banana)
1 tbsp cottage cheese or Natural yoghurt (vegan: 1 tbsp soy yoghurt)
2 tbsp quinoa flakes or oats (you can also use buckwheat flour or protein powder here!)
1 tsp baking powder
1 tsp cinnamon

A handful of blueberries + water for the topping

A tbsp coconut oil for cooking

Directions:

1. Mix together all pancake ingredients (by hand or by food processor) until they’re well combined to form a batter

2. Heat a saucepan and dollop on the coconut oil until it’s melted

3. Spoon the mixture into the saucepan and cook for a few minutes on each side

4. In the meantime, simmer the blueberries in a saucepan with a little boiling water until they become soft and sticky

5. Serve the pancakes and drizzle over the blueberry sauce! Eat right away
