Banana + Raisin Protein Bars

Good afternoon everyone! I hope you’re all having a beautiful Sunday. My day so far has consisted of a mega cardio session, eating lots of delicious foods, studying for law school and some kitchen time of course! In my weekly Sunday baking session I’ve wanted to make something which was energy filled, something that can be enjoyed in a hurry and something that will keep you satisfied whilst tasting delicious! ๐Ÿ˜„ these raw, vegan and protein packed Banana + Raisin Protein Bars are sure to do the trick! Enjoy.

To make 8-10 bars, you’ll need:

One 8 inch squared baking tin
3 small bananas (mashed)
100g pitted dates
80g rolled oats
50g mixed nuts (I like to use almonds and cashews)
2tbsp almond butter
100ml melted coconut oil
100g organic unsweetened raisins
1tsp cinnamon powder
1tsp organic burst maca root powder

Directions:

1. After you’ve mashed the bananas, add them to a food processor with the dates and oats and pulse

2. Add to the food processor the almond butter, mixed nuts, cinnamon and maca powder and pulse until they’re well combined to form a stiff batter

3. Drizzle in the melted coconut oil and pulse again until the mixture is the consistency of a cake batter

4. Spoon the mixture into a large bowl and, by hand using a large spoon, stir in the raisins

5. Scoop the mixture into the baking tin and pop the tin into the freezer for at least one hour

6. Slice, the enjoy! Keep refrigerated.

  1. These look delicious! I have wanted to slowly become vegan for a long time now, but I am worried that all of the ingredients will start to become to expensive! You are definitely inspiring me to try again though ๐Ÿ˜‰
