Spinach + Protein Pancakes

Sunday’s just wouldn’t be the same in my apartment if they didn’t include pancakes of some sort!! I think pancakes are the perfect weekend breakfast. They feel like an indulgent treat, they feel totally naughty, yet they can be turned into a nutrient powerhouse by substituting and adding certain ingredients. These pancakes are fantastic as you can’t even taste the spinach! Yummy!

To make three medium/large pancakes, you will need:

2 tbsp oats
1 medium banana
1 whole egg
1 egg white
1 tbsp protein powder
2 tbsp spinach
1 tsp cinnamon
1 tsp baking powder
For cooking: Coconut oil
For decoration: Strawberries + yoghurt + brown rice syrup/maple syrup + some banana coins

Directions:

1. Chop the banana (leave some slices for decoration) and put into a food processor

2. Add the oats, eggs, spinach, protein powder, cinnamon and baking powder to the food processor and blend

3. Cook the pancakes on medium to high heat in some coconut oil. Flip halfway through

4. Top the pancakes with yoghurt + banana + strawberries + syrup.. Enjoy!
