Chocolate Chip Cookies

Hello everyone! 🙂 I am sure you know by now that one of my favourite treats are cookies! I think that once they’re out of the oven and they’ve cooled just slightly they taste INCREDIBLE!

I’ve made these chocolate chip cookies for you all to enjoy this festive season, I hope you love them! I’ve also made vegan and non-vegan recipes so everyone can enjoy them! 🙂

You will need [to make six cookies]:

70g brown rice flour
1 tbsp solid coconut oil
2 tbsp coconut sugar
1/2 tbsp stevia
1 egg [or 1/2 a mashed banana for vegans]
2 tbsp almond milk
1/2 tsp vanilla essence
1/4 tsp baking powder
2 squares of chopped 90% cacao chocolate for the chocolate chips

Directions:

1. Preheat your oven to 180’C Fan

2. Melt your coconut oil and leave it aside

3. In a bowl, beat together the egg, coconut sugar, stevia, vanilla essence and almond milk

4. In a large bowl, add the flour and baking powder and stir gently so they combine

5. Add the wet mixture to the dry mixture until a cookie dough forms

6. Add in the coconut oil and cream the mixture together – then add in the chocolate chips

7. Spoon the mixture onto a non-stick baking tray into six even blobs, making sure you leave enough room between each blob as the mixture expands when it cooks

8. Cook the cookies for 8 minutes until they’re slightly browned

9. Remove the cookies from the oven and leave them to cool on the baking tray for at LEAST 10 minutes before you remove them

10. Once they’re cool, dig in and enjoy! 🙂
