Ho ho ho, it’s nearly Christmas! On a scale of 1 to 10, how excited are you?! In the spirit of giving, I wanted to share with you another brand new recipe! This one is a simple, yet delicious breakfast recipe which is low-calorie, high protein and high fibre. As it is the festive season, I am fully aware of our desires to eat an indulgent amount of [unhealthy] foods so sometimes it’s important to give our bodies a rest and opt for a slightly more forgiving breakfast to start our day!
Here’s what you’ll need to make one serving:
3 egg whites
1 tbsp milled flaxseed
1/2 tbsp oat bran
1 tbsp natural yoghurt
1 tbsp raisins
1/2 tsp cinnamon
1 tsp stevia
Berries or banana for toppings
Coconut oil for cooking
1. Mix together all of the ingredients [apart from the toppings and coconut oil] in a bowl and leave to set for at least 30 minutes
2. Heat up a saucepan (or frying pan) and melt the coconut oil
3. Cook the mixture until it creates a scramble and the egg whites are cooked – this should take a few minutes
4. Plate up the mixture and top it with banana, berries or even some maple syrup if you’re after extra sweetness! Enjoy!
