Nutty Vegan Bars

Hello everyone! I am doing so experimenting in the kitchen and I’ve also got lots of almonds laying around so I thought I’d make these delicious Nutty Vegan Bars! 😊 this is a new recipe, so I hope you like it!

Here’s what you’ll need to make about six bars-

100g almonds
100g dates
100ml melted coconut oil
20g oats
1tbsp brown rice syrup/maple syrup
1 tsp lemon essence
50ml coconut cream

Directions:

1. Mix all of the ingredients together in a food processor and pulse until the mixture is well combined, but leaving some nutty bites for texture.

2. Press the mixture onto a lined baking tin making sure the mixture is evenly spread out. I usually make my mixture around 3cm deep. Freeze the baking tray with the mixture for at least one hour.

3. Remove the mixture from the freezer and slice it, enjoy! These are kept in the fridge!

    Hi Charlotte,

    Been meaning to check out your recipes as I’m always seeing the results on Instagram! These look so so good, I’m going to give them a go tomorrow (if I can find coconut cream!). Thanks for the inspiration!
