Cookie Dough Cake Pops!

Hey everyone! It’s been forever since I’ve last posted a new recipe as I’ve been super busy at law school, however… Today I am bringing you an incredibly scrumptious cookie dough recipe!! YUM. This recipe was inspired by my love of all things gooey, chocolatey and comforting.

To make 12-14 cookie pops, you’ll need:

  • 2 cups of buckwheat flour 
  • 1 tsp baking powder 
  • 2 flax eggs [made by mixing 2tbsp milled flaxseed with 6tbsp water- leave to thicken]
  • 1 cup of coconut sugar/brown sugar 
  • 6tbsp solid coconut oil [then melt]
  • 2 tbsp raw cacao powder
  • 4 tbsp cacao nibs 
  • 1 tsp vanilla extract
  • A pinch of Himalayan pink salt 

Directions –

  1. Preheat your oven to 190’C (fan)
  2. In a large mixing bowl, combine the flour, cacao, baking powder and sugar, salt and mix
  3. Add in your pre-made flax eggs, melted coconut oil and vanilla and stir again 
  4. Finally, add in the cacao nibs and combine until the mixture is sticky and greasy 
  5. Grease and line a baking tin (you may need two!) and spoon out even mixtures of the cookie dough (usually around 2/3tbsp per cookie)
  6. Roll each cookie dough splodge into a ball and place them evenly apart on the baking trays
  7. Bake the mixture in the preheated oven for 7-8minutes, then remove 
  8. Leave the cookie pops on the baking tray on your work surface to cool for AT LEAST 20 minutes before you eat them
  9. Enjoy!
