Creamy Mushroom Soup. 

I’ve always thought of soup as a winter thing, but today I had a real craving for a bowl of warm and nutritious soup for my lunch! Sometimes we forget just how many different nutrients and vitamins we can pack into one delicious bowl of soup, but it’s a great way to get some goodness, whilst keeping you full, satiated and energised! Here is my creamy mushroom soup recipe (serving: one large bowl, or two small bowls).

The mushrooms and garlic combination is a classic favourite, and this soup is no exception. Did you know that mushrooms can help fight chronic disease? Due to their high antioxidant content and beneficial dietary fibres such as chitin and beta-glucans, mushrooms are a fantastic food to include in your diet. Mushrooms are low in calories, high in fibre and are rich in B vitamins. They are also the only vegan, non-fortified dietary source of Vitamin D. Mushrooms also provide several minerals that may be difficult to obtain in the diet, for example: selenium, potassium, copper, iron, and phosphorus. Ingredients

  • 1 tsp coconut oil
  • 1 red onion
  • 300g mushrooms
  • 1 clove of garlic
  • 1 tsp bouillon powder
  • 600ml water
  • 200ml coconut milk

Directions

  1. Dice and sauté the red onion on a medium heat in a large wok or saucepan, using the coconut oil
  2. Once the onions are soft, add in the mushrooms, chopped roughly
  3. Boil the kettle. In a jug, add 1 tsp bouillon powder to 600ml of boiling water and stir
  4. Once the mushrooms start to cook, add in the chopped or crushed garlic clove
  5. At the same time, add in the stock mixture and bring the soup to the boil
  6. Leave the soup to simmer for 20minutes, then add 200ml coconut milk
  7. Leave the soup to simmer for a further 10-15minutes
  8. Scoop the mixture into a blender (I use this Optimum 9200 next generation blender) and blend until smooth
  9. Serve with some black pepper and garnish with coriander!
