Frozen Baobab and Banoffee Pudding.

Hey everyone! This beautiful sunny weather here in London is making me crave lots of fresh fruits and frozen goodness, so today I’ve created this frozen pudding which is healthy enough to have as breakfast! YUM!   Ingredients

  • 1 medium banana (plus one for toppings)
  • 200g frozen banana
  • 100g frozen mango
  • 100ml almond/coconut milk
  • 2 tbsp organic burst baobab powder
  • 1 tbsp pure maple syrup
  • 1 tub of Wheyhey Banoffee ice cream
  • A squeeze of Choc Shot
  • Chia seeds
  • Wyldsson Californian Pomegranate Promix tube

Directions

  1. In a blender (I use the Optimum 9200 next generation), blend together one banana, the frozen bananas, frozen mango, milk, baobab powder and maple syrup to make an ice cream consistency mix
  2. Scoop the mixture into a bowl and swirl in the pot of melted Wheyhey ice cream (I popped mine in the microwave for 20 seconds to melt it!)
  3. Top the pudding with a drizzle of Choc shot, a sprinkle of pomegranate Promix, some chia seeds and 1/2 a sliced banana
  4. Eat right away!
