Black Bean Brownies

This is a recipe that I have wanted to create for a while now. Brownies HAVE to be the nations absolute favourite tray bake, right?! I don’t know about you, but those gooey squares of deliciousness can brighten even the most dull and dampest of days (how timely and ironic – it’s currently August in London and it feels like November….). However, as I get older and educate myself more on the food that I am consuming and how that is affecting my body, I am conscious of putting those little manufactured squares of goodness into my mouth. That is why I have created this brand new recipe which is full of fibre, natural whole food ingredients and some antioxidant goodness! I hope you enjoy it.


WHAT YOU WILL NEED:

  • a 22 x 28inch baking tin (and greaseproof paper to line)
  • 1 tin of black beans (rinsed, should be approx. 400g)
  • 55g melted coconut oil
  • 100g cacao powder (cocoa powder also works)
  • 2 medium eggs
  • 1 tsp vanilla extract
  • 120g pitted prunes (I used dried prunes)
  • 80g coconut palm sugar



WHAT YOU SHOULD DO:

  1. pre-heat the oven to 180’c (fan)
  2. mix all of the ingredients together in a food processor/strong mixer until a sticky smooth batter is formed and all ingredients are combined
  3. scoop the mixture into a greased and lined baking tin
  4. bake the mixture in the oven for 20 minutes (or until a knife comes out clean)
  5. leave to cool for at least 30 minutes
  6. slice into 12 square pieces
  7. enjoy!
